Prepping liver, kidney, heart, caul fat

BBD. How do I prep the above items for a stuffed roast?

There is a meateater episode in the season they just loaded to Netflix where they wrap chopped liver, kidney and loins in caul fat from an elk and cook it in the field. I think it was the Afognak Island one, but not positive.
