I eat a lot of fish throughout the year. Probably more than most. Just how I grew up I guess, but if I don’t get it atleast once a week I get grouchy. Cook em up all kinds of ways to keep from burning myself out. Would say my top 4 fav are....
1.) standard cornmeal battered fried
2.) tempura battered crappie tacos
3.) put crappie filets in bowl, coat in sour cream, then toss in seasoned flour and fry. Sounds awful but dang it’s good.
4.) tortilla, cilantro, lime crusted baked crappie
Lessons learned.....
When frying maintaining 365-370 degrees is where the magic happens
If using only one fry pot, cook taters first
Keep fish dry and only put in the batter mix right b4 going in the grease
When doing a big fish fry, throw a whole dang onion in your grease pot and leave it! Will keep the grease your from burning
And finally..... the only thing better than 1 crappie dinner is 2 crappie dinners!
