I'm looking for a good book or resource for teaching how to sort out the different cuts of meat from deer. Not really basic butchering as I can do this, but an advanced resource for deciphering sirloin cuts etc.
Anyone have a suggestion? I'd like to take game meat to the next level so to speak.

The outdoor edge game processing DVD series is very good. I got them for Christmas from my mother in law and didn't watch them for like the first year. Goes from field dressing all the way to breaking down the different cuts of meat. Although it doesn't seem like the field dressing part would be that informational I learned a lot and is now how I clean all of my deer. A little boring but very educational.
