i bleated a nice 150" 8 pt chasing a doe at approx 15 miles an hour and he stopped way faster than expected and out of range.

Not usually a consideration, the longbow is moving 180gr at about 3450 fps.

I blew a shot on a giant (dropped off the planet on the shot at 30 yards) by mouth stopping em... I don't anymore

Ha same thing happened to me (but he wasn't a giant). I tried that on a doe and she didn't even bother looking as to where the noise was coming from, she just bolted! No more mouth stopping for me. If they stop fine, if not oh well, it wasn't meant to be.

I don't stop them unless I have too which is not very often. I only hunt with a recurve. Sometimes if they are walking kinda fast out past twenty yards I will stop them. But anything walking 20 and under requires very little lead even with a slow recurve.

I don't make any noise unless it is running and I have to try to get him to stop.

I haven't stopped a buck to kill him for many years (18). I got hooked on a nice 11 point buck he just didn't stop where I wanted him to.
You can fool some of the bucks, all of the time, and fool all of the bucks, some of the time, however you certainly can't fool all of the bucks, all of the time.

I have stopped the majority of the deer that I have killed or shot at. I am rethinking this strategy though.

I initially figured that most of my hunting ground is pretty low pressure, so the deer shouldn't be walking on pins and needles. However, I had a doe walking at 30 yards last year, which I mouth bleated to stop for the shot. I was already drawn and ready, but she ducked and completely spun out of my arrows path. I wish that I had video of the shot because it was pretty amazing.
