Wet Aging
Like most people, I don't have a walk in cooler so I tried my hand at Wet Aging in a cooler covered in ice, drain open, meat off of the bottom. Does anyone have enough experience with this to know why the meat feels slimy? It doesn't have a bad odor or anything but it's ridiculously harder trying to cut the meat with it sliding all over the place. Anyone have any tips or tricks on how make it dry up some for cutting/trimming up?

Throw it in the freezer for a bit. I prefer to trim meat when it’s good and cold but not frozen. Same with grinding burger.
