In hill country, when is wind less likely to be gusty/changing direction?

Here's the weather forecast here for next 10 days. It's obvious to me that Friday, Nov 1 should be a great day. However, it is right as the weather has passed and high winds drop some on that day but are still higher than on Saturday, etc. Typically, are winds more variable as far as direction on days like that? If hunting just off wind near bedding and really needing a consistent wind, is it better to wait a few days into the high pressure until the wind is lower and has been travelling in that direction for a longer period? Or are lower speed winds more likely to switch around on you? I know that days with nearly no wind are tough because it seems like the 1 or 2 mph wind just moves around in all directions at a slow rate. Thanks.
