What's are your favorite Specialty Cuts from processors?

Mine are deer jerky (any) and summer sausage both in a casing and in patties.

Never had an animal processed, but if I did I'd get an entire deer made into the Cheddar Jalepeno Summer sausage My cousin had made back in 2014.

Do all my own processing. I do it all from jerky to summer sausage. Tough to choose favorite from those two. But my favorite food prep by far is braised shoulder roast. Simmered for hours in Dutch oven till it's falling off the bone. Then add potatoes carrots and onions last hour for thick stew. Oh man!

I love the sweat breakfast sausage I got 3 deer this year and got one deer made in just breakfast sausage

BBQ snack sticks, hot dogs and landjaegers from our Amish processor. Haven’t met anybody who doesn’t like them, and we always have them with us. Have done bacon and hot sticks and not a huge fan. Going to try some other stuff if we get our elk next year

When we butcher our deer, we only do steaks, stew meat and burger that gets sent to the processor.

I have never used a processor, but have had other people's stuff from a processor. I typically do not like stuff from a processor because it's usually over seasoned with artificial flavoring, nitrites/nitrates/MSG. I like to keep my wild game as wild and natural as possible...My favorite specialty item is definitely jerky. Although I have had some processor summer sausage/cheese and bologna/cheese sticks that were very good, just too much artificial flavoring and fake cheese for me. I should try to do those myself some day....

I cut my own up and make muscle jerky and ground jerky, both are tremendous. Processor stuff is always way too salty for me, I go with minimum salt to make it shelf stable and that's it.

I have made some fresh sausages...while good, they are just nowhere in the ballpark of pork sausage, and that's even cutting it with pork fat. The best I've had highlight and complement the taste of venison...sage, juniper, garlic, rosemary, and salt with a light hand.

I know how to cook all the different venison cuts and I treat them with the utmost respect. There isn't an ounce of the deer that "needs" to be further procesed. To turn a deer into bologna or whatever, do you, but it's not for me.

I had some blueberry maple venison breakfast sausage that a friend had made by his processor once....it was awesome!

I cut my own deer up and every few years have sausage made otherwise I do jerky and brat patties :L:

Shanks are my favorite cut too. Neck roasts work great for a whole bunch of recipes too. Also love backtrap carpaccio.

I don't have the space or $$ for equipment and my buddy that processed my deer moved away. So for now I'm at the mercy of local processors. I actually found a good one too but he went out of business due to health complications...

Craziest thing off a whitetail I've eaten was tongue.. very chewy but tasted like a roast ;)

I do all my own processing too. I love me some whole muscle jerky but my absolute favorite is Semi dry Deer Landjager. It’s traditionally a dry cured sausage but I cook my then dry it down some. I love it but it’s work to make it. Next would be a deer Kabanosy or a pepperoni like snack stick. I really like the fermented sausages
