Island characteristics
Are there certain characteristics that should be looked for regarding islands in the marsh that would make one better than the next? I have come across an area with a couple dozen islands near by each other. They vary in size and shape, the biggest being 2-3 acres in size the smallest being 10 yards × 10 yards. I found these cyber scouting so I have not layed eyes or stepped foot out there.
God gave us 2 ears and 1 mouth. That means we should listen twice as much as we talk.

Big enough to support a few acorn yielding oaks. Small enough to be ignored by others. Tapers off into brush mixed with cattails along a narrow point, preferably, to the natural down wind side of the island.

How far can the island be from a main land mass for deer to inhabit it? Also, does it need to be fairly shallow at one point for the deer to use it or will they swim out to it to get away from hunting pressure?

Thats dependent on a lot of factors... Yes, they can and will swim to some islands, but don't like swimming across open water especially longer distances. They tend to like swampy thick cover with water they can walk thru. Water is certainly a plus, but to much is a downfall.
