I want to hunt a parallel trail this year but can only access it from the upwind side, so is it worth it. I have a nice tree picked out on the downwind side of the trail. Should I try jumping over it?

Do your homework that will tell you a lot. Where does the trail go in each direction?
I'm reason they call it hunting and not shooting.

The trail runs north to south in between soy bean field and doe bedding. The ag field lies to the west of the trail and doe bedding to the east of the trail. The area is predominately a western wind. Plan on hunting it only once in first week of November, so if it burns up I am not too concerned. Will a cruising buck catch my scent if he is cruising the trail? If so, how do I set up on it?
