Re: Journals
I record all notes, beds and deer activity and sign on my hunting app (huntstand) while out in the woods.
Then when I get home I transfer all of this info into a hunting binder I created. Just a plastic binder from Wally world with laminated pages inside. I printed out all of my topo maps off caltopo and then marked deer sign and my kill tree on them with highlighters. Each stand and bed location has its own # which I can refer to for my notes and wind direction in the back of the binder via lined paper

Re: Journals
I use a combination of Huntstand, a paper journal + an Evernote notebook--helps you search + organize notes, maps etc (archives all your notes for you)

Re: Journals
I use a paper journal I get at staples. The one I use is 3-1/2 by 5-1/2 which has a pocket in the back that I use for pictures. I typically get two seasons in each journal.
