Funny you should ask, I have a big Burr Oak in my backyard that is positively loaded with acorns this year. I am anxiously awaiting them dropping, and will be giving it a go this year for the first time this year. Pretty excited to see what I can come up with. For whatever reason I have never really done much with wild nuts, even though I can walk out back and get buckets of Black Walnuts, Hickories, and several kinds of acorns. This year I'm trying to change that, have a big batch of Nocino going right now, which is an Italian walnut liqueur. Kind of seems like it is basically homemade Jager. Should be ready in December.
