Cut 2" thick steaks.
Rub with Montreal Steak seasoning.
Cook to medium rare on pre heated grill. (Red side of pink in the middle).
Serve with New Castle Brown Ale in a frosty mug!!!

Marinate steaks in dales low sodium seasoning for about 20 mins. Then butterfly them. I buy roasted red peppers that are marinated in garlic and olive oil..i put one of these inside the steak. Then I roll the steak in blue cheese crumbles and then wrap tightly in bacon, using toothpicks to securely hold it in place. Pre heat grill. Then cook until the bacon just gets done, this will leave the steak cooked to a medium rare. I've also done this with jalapeños and cream cheese

This...true medium rare - warm red center.
Or 4-6 inch sections prepared the same way then sliced as thin as you can and put it on some buttered rye bread.

Thin cuts fried in corn meal and flour. Fry medium rare. Place in between 2 pieces of white bread with some maple syrup poured on top the strap.

On the grill I like to make 1/2 a back strap with some seasoning salt and cook both sides till med-rare in middle. Slice into medallions and serve.
On stove I like to slice backstrap into medallions, sprinkle a little seasoning salt on each side, cook in butter till both sides are just brown then simmer in onions and mushrooms till onions are cooked.
Just got done eating a cold turkey sandwich for lunch at work. Backstraps sure would be tasty right now. My mouth is watering reading these recipes.

Butterflied out. beaten with a meat tenderizer, dipped in egg, dipped in saltine cracker crumbs, and then pan fried...Put the loin on a Hamburger bun and enjoy.

my last backstrap i did in olive oil Salt and black peppercorn with a little worchestshire...not much was trying to make a peppercorn style marinade....I sealed it in a bag and let marinade in fridge for a day or so and then froze it.....2 weeks later i took it out and grilled it at 375 until my internal thermometer read 145* flipped it once then i pulled it and the texture was unbelievable and i ate the whole thing by myself!!!!!

A good rub plus garlic and allowed to set at room temperature for a few hours. Cooked Sous Vide to Rare. Heavenly.
