What do you guys do when you don't have the right wind? All of my hunting properties need winds from a southern direction. From S,se,sw,e,w. However all I'm getting lately is winds from the north.

Don't hunt those properties. Sounds like you know where to build your property portfolio for next year...

X2...
I've had the same issue at times. Like Dan says, the trick to having many spots for many different times and situations and winds is to keep adding to the ones you have every year. I'm adding a few to my list every year.

Get your maps out and locate a spot for a north wind. Go out there with the stand on your back...find hot sign...hunt.
