Thanks for posting that Zap...anymore if a deer is more than a few hundred yards from the vehicle, or if I have to drag it uphill, I think packing it out is much easier. Anybody can master it - the first time will be slow but the second time a lot faster, third time it will be easy.

The guy never took the tenderloins which I am surprised by although I know on a deer that small they would be about 3 bites each....you can get them out with a slit along the backbone from the last rib to the pelvis, the last thing you do before you flip it over cuz the guts will start to come out the hole. You can also take a couple minutes to trim some more side and neck meat, there is very little waste that way.

Interesting video. A deer that size you can probably pack out in one trip.

It was cool and all, but like JoeRE said, no tender loins, and lots of wasted sausage meat. He just took the easy stuff. But I guess when your down south, you don't worry about it and just shoot another one tomorrow.

They come out pretty easy, make sure when you slit between the last rib and pelvis you don't cut too deep and hit the stomach, just as if you were field dressing it. Like I mentioned before do it last step before you flip it, the guts will start to bulge out the hole otherwise and will be in the way.

Red line is where you make the cut to get out the tenderloin. You can cut into the chest to get out the heart if you want too. Photo is an elk but no difference.

Oh and remember if you are on a slope turn so head is UPHILL...everything just works better that way and doesn't slide around.

Geez, and I always thought Zap was Clint Eastwood... Kinda like revealing the Wizard in the Wizard of Oz or something...

Great video, and there's no substitute for a good sharp knife! For the skeptics- a 200# buck is a one trip carry and you can take as much of the sausage meat as you want (neck, ribs, shank, etc).

I was raised doing this- in fact I don't think my 'Ole Man has ever dragged one out? A few small things I do differently:

1) When skinning a side I make a cut that runs from the front of the knee, up the front of the shoulder to the spine, straight down the spine, and at the base of the tail I follow the white/brown hairline down the back of the hindquarter to the hock. I then place a knee on the midsection and give the hide a couple of hard downward tugs (put your knife down for this step). For me, this saves time and minimizes opportunities to cut hair and get it on the meat.

2) I bone the whole shoulder out on the deer leaving the scapula- I don't like carrying out any more bone than necessary (unless it's antlers)

3) On the backstrap I like to peel the fatty/sinew sheath off as I pull the backstrap out (comes off easier than the hide). Just make an inverted cut along the length of the spine and just peel it back like a banana peel.

4) Recently I started using clear, food safe garbage bags. Someone pointed out that there are lots of carcinogenic chemicals in ordinary garbage bags, so I switched last year or the year before. They are just as big and tough as the contractor bags I used to use.
