That is fast. I wish I had a table that big. I have to cut mine apart hanging.

He was at the With deer and turkey expo this year and I bought his DVD and he was also selling the meat hooks that he uses. He was impressed that I remembered him from youtube. Real nice guy and he knows his stuff. I would suggest getting the video, very well done.

My fastest time from hanging to wrapped and in freezer was 3 hrs. Looks like I have a long way to go!

That is what you call good with a knife!! Although he has some trimming to do before I would want to eat some of that meat Regardless that is impressive!
If you get a system down, and good equipment, meat processing is not hard. Its extremely satisfying to do it yourself, it brings a lot to the hunting experience. I wish more people tried it.
Start to finish, from hide on to packaged in the freezer, for a big deer is about 3 hours of work for two average guys who know what they are doing working together I think. That's assuming its not too shot up and you just want basic roasts, stew meat, some burger, etc. Big bucks shot late in the year butcher faster than a fat doe even though they have more meat - less trimming. Start simple and don't try to produce difficult cuts of meat until you have some experience.
