Here is a photo of the buck after the kill in the back of a pickup with some of his closest friends.
An a live photo from the buck the season prior to the kill. He showed this photo to several guys at the Michigan show that year.

It's a Photoshopped picture. Not everything that appears to be real is real.

If I remember correctly, Mitch was hunting from the ground and the buck came from a different direction than he expected and he wasn't going to be able to get a shot off because it was so thick, so he pulled out his camera and snapped a pic.

What makes you think that Stanley? Im not saying the photo isn't altered or is. But remember this was back in 1997 and on a film camera most likely. He had a hard copy pic at the deer show and showed several people including a few people I know before the year he supposedly killed it. I'm not even sure there was a lot of photo shopping going on back then and definitely not much with film cameras. Plus I don't believe Mitch to be the tech type guy to pull that off especially in 1997.
There are people that saw the buck dead, a recovery video, an article in Deer and Deer Hunting in 1998 in which 3 official scorers were able to look over the rack and score it and determined it was real in their opinion.
I don't really know if it's real or fake obviously but I don't feel like I could make any determination either way without ever seeing the deer in question.

That picture didn't surface until years later. It was a long standing spoof.

The video looks allot better than the pics of him holding it for sure, I guess anything is possible but very unlikely given some of the documented facts surrounding the whole deal.
