Skinned and quartered a doe last night, deer is in a cooler on ice, howw long can I leave her in there? As long as she's on ice im pretty sure its fine, but I always worry.
How long will it be ok to wait until I debone and freeze?

With the skin on, hanging, they'll last a lot longer than in a cooler quartered on ice.And its not good to have meat soaking in water. How long will it be like that?

2-3 days? I have the cooler tilted and the drain cap open so water runs out.
I know the wet meat is bad, thats really what I was inquiring about.

Re: quartered and on ice.......
I think the water on the meat is what breeds bacteria? I usually skin mine right after I shoot them because the skin comes off so well when the deer is warm. Then I let them hang for a day or two without the skin on and then I do all the butchering and wrapping. I've never left them in a cooler before I am interested in hearing what others have to say. If its only 40 degrees you probably could have skipped that step all together...

Some folks may not have a spot to hang a deer...cooler has worked well for me in the past, up to a week or so.

Down here in the south, place the meat on top of the Ice for 4 -5 days and every couple of days, drain the water so the meat does not sit in the water.
Add ice if necessary and put the meat on top of that.

When I cooler mine I put it in ziplock bags and saran wrap to keep the water off.
