Big hunt when I fry my tenderloins (generally with eggs for breakfast) I butterfly them. On the grill I leave em a little thicker like muddy has done.

Oh that's Slow Elk Stout from that Montana brewery, Big Sky I think? They make moose drool and scape goat ipa. Its a new seasonal.

True, but in my experiences butterflying any type of meat means you want it cooked more in the medium well to well done range, which I don't care for. The thicker steaks are built for rare to med rare in my world.
The only thing I butterfly are pork chops because oinkers need to be cooked thru.

Thanks for the reply. I'll have to give that a try. If you can ever get your hands on some Big Boss Bad Penny give it a try since you like micro brews. Its brewed not too far from me in Raleigh, NC.
