Jeff, quick question, I usually start skinning from the hind legs (hanging as shown) and just leave the whole hide on. Do this for two reasons, one to keep as much hair off the meat as possible, and two, to make sure I don't come close to not leaving enough. Never had a taxi complain from it, is this a pain in the but for you for any reason? I also usually slit along the front leg line like you showed, then saw my shanks off and can usually just get the cape off without needing to cut any further than the armpit, any issue with that? I'm not putting one on the wall every year, so not a big issue, just curious, and since we have a local expert, thought I'd ask.
